Off the Menu: What Happened to All the Hype About Plant-Based Foods?

Just a few years ago, plant-based meat and seafood substitutes seemed to be “the next revolution” in the restaurant industry.

Plant-based meat startups like California’s Impossible Foods and Beyond Meat developed ground beef and sausage substitutes and signed deals with brands across the fast-food and casual-dining spectrum. Dishes made from the meaty wannabes soon started popping up on menus from coast to coast.

Flash forward to 2024, and it’s clear that these engineered meat alternatives have yet to live up to the hype that first greeted their introduction. Plant-based options have been quietly removed from some menus (remember the McPlant burger?) and relegated to niche status in others. Meanwhile, major plant-based meat producers are struggling with declining sales.

What explains the lack of success of plant-based meat?

Cost is certainly a factor. Plant-based meat substitutes still cost two to three times more than the products they are intended to replace. This cost difference is partly due to the nature of the products themselves and partly to a lack of economies of scale in their production.

And then there’s the perception of the “disgust factor” that comes with meat and plant-based proteins. Studies confirm that there’s an inherent reluctance among consumers to switch from “natural” meat to factory- or lab-made alternatives. Overcoming that resistance, especially when plant-based meat alternatives remain at premium prices, is a significant barrier to mainstream acceptance.

Finally, plant-based protein products, which are made through complicated manufacturing processes, are viewed by some as potentially unhealthy. To combat such criticism, manufacturers like Beyond Meat are reformulating their beef and chicken substitutes, swapping out saturated fats and reducing the overall number of ingredients used. In doing so, they hope to avoid the pejorative label of “overly processed” foods.

Given the issues of cost and consumer acceptance, it is unlikely that plant-based meat substitutes will gain widespread acceptance any time soon.
